Manuka Honey - Airborne - 500g Description: The Manuka is found throughout New Zealand and often forms extensive areas of bush. The leaves are dotted with oil glands, and when bruised give off a gingery peppery smell. The flowers vary from brilliant white through to rose-pink.The Maori people used Manuka as a medicinal plant, from treating fevers and colds to sedatives and early European settlers called it the "tea tree". Apart from the medicinal properties contained by all honeys, Manuka honey contains a number of natural compounds with strong antibacterial properties. This is a strong flavoured honey but with a fresh clean bite.Manuka Honey also has this varying degree of antibacterial activity due to H2O2, but has been found to have a further amount of antibacterial activity that is present after the Glucose Oxidase and H2O2 have been neutralized with Catalase. This activity is referred to as the Non Peroxide Activity (NPA). Recently the letters UMF ("Unique Manuka Factor") have been privately trademarked in New Zealand (UMF) to represent a standard of NPA antibacterial activity. This standard represents a manuka honey with an NPA that is equal to, or greater than, the antibacterial activity of a 10% solution (%w - v) of phenol - water. Here honeybees collect drops of nectar glistening like morning dew in the sun. The flavour is malty, earthly and reminiscent of beech forest. Honeydew is both high in mineral content and rich in oligosaccharides.New Zealand Honeydew is one of New Zealand`s premium export honeys. It has a history of export to Europe and specifically Germany since the early 1970s. There are several honeydew producing scale insects in New Zealand inhabiting a variety of plants. New Zealand Beech honeydew is typical of most honeydews in having a high conductivity. This arises from the nature of honedew production. An insect of the Homiptera order of insects (those with sap sucking mouthparts e.g. aphids, scale insects etc.) sucks sap from the host plant and exudes a sweet sticky nectar which is essentially slightly modified sap. This is then collected by honeybees as a nectar source and is "ripened" into honey. This pathway is quite different from that of normal flower honeys. The direct sucking of the sap, the additional insect in the production chain, and the presences of sooty moulds, all add up to an additional mineral content not normally found in flower honeys. This is indirectly measured by the ability of honeydew to conduct electricity. The average conductivity for Beech honeydew is 12.6 mS - cm with a standard deviation of 2.5mS - cm (750 records).Honeydews are normally high in Fructose, low in glucose and have higher levels of higher sugars such as maltose . Their tendency to crystallise is also low. Beech honeydew is likewise very slow crystallizing and in fact some beech honeydews never crystallize. Rata Honey - Airborne - 500g Description: Rata Honey is produced predominantly from the Southern Rata on the West coast of New Zealand`s South Island. While there are eight Rata species (Metrosideros sp.) in New Zealand including some vines as well as trees, Southern Rata (Metrosideros umbellata) is the main honey source. The honey is very light in colour (5-25mm pfund scale) and distinctively flavoured with an almost salty taste. The pollen is triangular and typical of the Myrtaceae (Myrtle) family which includes eucalypts, bottle brushes and leptospermums (manuka).Southern Rata flowers from early January to March. The lowland trees start flowering first and the flowering then progresses up to higher altitudes. In some areas it is possible to see a distinct band of red cutting around the mountainsides, the lower trees having finished flowering. The frequency of the Rata flowering is sporadic, some saying it flowers well every 3 years and spectacularly every 7 years. This is an approximation only as it can flower well for 3 years in a row and not at all some years making the honey supply intermittent. This irregularity of supply is offset by Rata being one of the finest honeys in the World, and when a good flowering coincides with with fine, stable weather, it can produce a prolific crop of high quality. "Fine weather" however is a commodity that is often lacking on the South Island`s West Coast. The "Coast" has a very high rainfall with the Otira region averaging over 300 inches (7.6 metres) of rain per year!Rata honey is one of our fastest crystallising honeys with a proportionally high glucose content. This can present problems to the producers extracting Rata honey. If they don`st get it extracted and processed ready for sale quickly, it sets hard and stays in the combs! Thyme Honey - Airborne - 500g Description: Thyme Honey is probably New Zealand`s strongest flavoured honey. It is a member of the mint family, and the aroma and flavour of Thyme honey is herbal, pungent and distinctive. Thyme Honey is produced from the herb "Common Thyme" (Thymus vulgaris) in a small area in Central Otago in New Zealand`s South Island around the town of Alexandra. It is thought that this is the only population of Thyme growing wild outside its natural range of countries bordering the Mediterranean. Thyme was brought to the area by miners during the gold rush of the the late 1800s, who used it as a herb and medicinal plant. As the gold mining diminished, it slowly spread to become well established in the arid climate of Central Otago.Preferring North facing slopes, (particularly the gold "tailings" from mining operations) Thyme is slowly spreading on the drier, poorer soils, but is easily controlled where adequate water and soil quality allow clovers and grasses to flourish, smothering the Thyme.Thyme is a strongly flavoured perennial herb, growing to a maximum of around 30cm high.
